Nephew of Beaujolais natural wine pioneer Marcel Lapierre and student of the legendary Jules Chauvet, Philippe Pacalet spent a decade as winemaker at Domaine Prieure-Roch before founding his own negociant house in Beaune in 2001. Working with 18 hectares of sourced fruit across top appellations, he produces around 65,000 bottles annually of strikingly pure, whole-cluster wines. Works exclusively with growers who farm organically or biodynamically. Whole-cluster fermentation with native yeasts, no sulfur during fermentation, no fining or filtration.
