VinificationThe grapes are harvested at full maturity, searching for expression rather than a bigger yield. Maceration and fermentation take place in underground concrete tanks for a minimum of 5 weeks, and full malolactic takes place often along with fermentation.
ÉlevageAt least 6 months in tanks, no oak.
Vineyard SoilA mix of two terroirs – flinty clay for the majority, and sandy soils for the remainder. The blend of these two soils brings complexity and finesse to the wine.
Cellaring3-5 years

Fruity, expressive with spicy notes on the finish. Balanced alcohol, 3-5 year cellaring potential.
