| Vinification | Spontaneously fermented, without malolactic fermentation, and aged for an extended period on its lees. After hand-picking the grape bunches in the vineyard and subsequent selection at the winery, they macerate for 48 hours. A starter culture is prepared several days prior to the harvest to aid spontaneous fermentation with its own native yeasts, a very long fermentation process carried out at low temperatures. After fermentation, from the must of the plots destined for Envidiacochina, the top portion of the vats are selected from that vintage with the highest fruit intensity (Tête de Cuvée). |
| Élevage | Aged on the fine lees for 6 months (with weekly bâtonnage for the first 3 months and monthly for the following 3). The final blend is the result of combining it with 15% of the previous vintage destined for Flor de Carme (which, until then, had been aging on its fine lees with bâtonnage for 15 months). It then undergoes 6 months of bottle aging. Bottling on a Flower Day. |
