Specifications
| Appellation | DO Rías Baixas |
| ABV | 13.0% |
| Vinification | After the grape bunches are hand-picked in the vineyard and subsequently selected at the winery, they are macerated (8-10 hours). A starter culture is prepared a few days prior to fermentation to aid spontaneous fermentation with the wine's own wild yeasts. Fermentation occurs at a low temperature for a very long period. |
| Élevage | The wine is aged on its fine lees for 6 months with monthly bâtonnage, followed by approximately one year of aging in stainless steel tanks and another year of bottle aging. Bottled on Flower Day. |
| Vineyard Soil | Sandy loam |
| Harvest | Hand-picked |
| Average Vine Age | 38+ years old |
| Tasting Notes | Straw yellow, clean, and bright. Nose of candied citrus peel, apricots, white peaches, floral notes of honeysuckle, and minerality. Fresh citrus and crisp apple flavors, balanced acidity, and a structured, long, and lingering finish. |
| Serving Temp | 10-11°C |
| Additional Notes | The front label features a modern Neptune, which, when unfolded to the "OPEN" section, reveals the original label used by Eladio Piñeiro on his first wine in a blue bottle (the first in the Spanish market for a food product), launched in 1991. Thermochromic ink on this "original" label indicates the wine's optimal serving temperature. |
