VinificationAbout 2 weeks of maceration in stainless steel tank at 28 degree temperature control. “Follatura manuale” and remontage process 4 times per day for the first 5 days until the end of the pressing process.
ÉlevageIn French oak barrels (tonneaux) of 7q for 12 months. Bottling usually June of the second year after the harvest. Fining in bottle.
